Another Wisconsin Foodie

OK, What we have here is Pierogis great polish dumplings.  You can get both this and the Potato Bread recipes from here, a very good site.  <http://www.kingarthurflour.com/shop/RecipeHome> My wife  took the basic recipe for the dumping shell and then added her own take on the stuffing.  Which was: mashed potatoes ( in addition to the butter she used Greek yogurt very good stuff, stiffer than sour cream), sauerkraut and Provolone cheese.  After boiling them she pan fried them with butter, added caramelized red onions, and fresh spinach.  In the end served them with fresh black pepper and grated cheese.  Awesome!

With the extra mashed potatoes we made Potato bread, excellent too, extra special good right out of the oven with  butter, can't beat that for dinner.
